Blackberry Sage Popsicles

Blackberry Sage Popsicles

Yield: makes approximately 10 popsicles, depending on the size of the mold
Prep Time: 20 minutes
Cook Time: 4 hours
Total Time: 4 hours 20 minutes

Blackberry + sage. It may seem like an odd pairing, but it's a surprisingly winning combination.

  • 3 cups blackberries
  • 1/2 cup sage sugar syrup (see notes below)
  • 1 1/2 tablespoons lemon juice

    1. In a blender, pulse the blackberries several times, then add the sage sugar syrup and lemon juice and blend until smooth. (If desired, pass the mixture through a sieve to remove seeds.)
    2. Pour into the popsicle molds and freeze until completely firm, at least 4 hours.

Note about yield: This recipe makes approximately 3 cups of popsicle mixture, which makes 10 popsicles in this simple popsicle mold.
Note about sage sugar syrup: Herbal sugar syrups are simple to make - all you need are sugar, water, and herbs, in this case fresh sage. See how to make herbal sugar syrup here.
