Hamentaschen (or Hamantaschen, however you prefer)
makes approximately 2 dozen cookies
Ingredients
For the Dough
juice and rind of 1/2 orange, cut into large pieces
2tablespoonsunrefined cane sugar
2eggs
¼cupclarified butter, melted and cooled (see
¼cupcoconut oil, melted and cooled but still liquid
1teaspoonvanilla
1tablespoonhoney
2-2 ½cupsall-purpose flour, organic, unbleached, and unbromated
¾teaspoonbaking powder
large pinch of sea salt
For the Filling
8oz.pitted prunes
½cupraisins
½cupdried apricots
½cuppitted dates
3tablespoonschopped almonds
1large lemon wedge with peel
Instructions
For the dough
Using a food processor, process the orange and sugar until fine.
Add eggs, butter, coconut oil, vanilla and honey. Process until blended.
Add baking powder and 1 cup of the flour. Pulse the food processor just until flour is blended into the dough. Do not over process and be careful not to burn out your motor! The dough will be sticky.
Remove dough from bowl and place on a lightly floured board. Mix in the remaining flour to make a dough that can be rolled out. Do not handle any more than necessary, or the dough will get tough.
For the filling
Chop all ingredients and combine in food processor and blend to a mostly uniform paste. A few remaining lumps are okay.
Assembly
Roll dough to about 1/4" thick. Cut circles with a glass or cookie cutter.
Place a spoonful of filling in the center, then with your thumb and forefingers, bring the sides of the circle up to form a triangle and slightly pinching the sides together at the top.
Brush with beaten egg and bake at 350° Fahrenheit until golden brown, about 12-15 minutes.
Cool on the cookie sheet for 1 minute, then remove to wire racks to cool.
