I love strong flavors, so this has a potent amount of garlic in it. Feel free to reduce it to 1-2 cloves if you prefer!
Serves 8-10
Ingredients
6ripe tomatoes, peeled and chopped
1large red onion, chopped
2cucumbers, peeled and coarsely chopped
4sweet red bell peppers, seeded and coarsely chopped
1stalk of celery, coarsely chopped
6clovesof garlic or 2 long garlic scapes, chopped
¼cupred wine vinegar
1tablespoonraw honey
1teaspoonunrefined sea salt
smoked paprika or hot sauce, to taste (optional)
2cupstomato juice, optional
Instructions
Pureé all ingredients in a blender or food processor, working in batches if necessary, and blend to your desired consistency. Cover in a non-reactive storage container and refrigerate for at least 8 hours before serving.
